SAP Landscape in simple terms - the SAP system tier definitions within your project.
Generally SAP landscape consists of 3 systems: dev- test- prod.

Sandbox - DEV- uat- qual - prod; this constitute a SAP landscape for one product, say ECC.

In a broad view, SAP landscape means the overall SAP systems within your client system architecture.

In SAP the layout of the SAP systems installed, system groups or servers linked via transport routers etc. in hierarchical structure is known as Landscape. Thus it is also known to define the architecture of the servers. Mostly 3 system landscapes are recommended in which each of the central clients has its own SAP system- development system, quality assurance system and a production system. A two-system landscape is an alternative for smaller SAP implementations where little Workbench development takes place.

In short, Landscape: is the arrangement for the servers.
